A type of fried rice popular in central Thai cuisine is Thai fried rice. In Thai, the words khao and phat both imply “rice” and “of or relating to being stir-fried.”
This meal varies from Chinese fried rice in that Thai jasmine rice is used in its preparation rather than ordinary long-grain rice. Egg, meat (usually chicken, shrimp, or crab), onions, garlic, and — on occasion — tomatoes are other typical ingredients. The spices, which may include nampla (fish sauce), soy sauce, sugar, salt, perhaps some chili sauce, and other seasonings, are stir-fried with the other ingredients. The entrée is then presented on a platter and garnished with phrik nampla, a fiery sauce comprised of thinly sliced Thai chilies, minced garlic, fish sauce, lime juice, and sugar, as well as accompaniments including cucumber, tomato, lime, and coriander and green onion sprigs.
